Black Glutinous Rice Sponge Cake


Ingredients :

- 300 gr of black glutinous rice flour
- 100 gr of white glutinous rice flour
- 1 tsp baking powder
- 7 eggs
- 225 grams sugar
- 1 teaspoon salt
- 1/2 cake emulsifier (if you like)
- 125 ml cooking oil
- 5 tablespoons sweetened condensed milk
- 2 tbsp of coconut water

Special Equipment :

- pan with 24 diameters ring.

How to make Black Glutinous Rice Sponge Cake :

1. Grease a baking pan with oil and heat boiler. Sift flour glutinous black, white glutinous rice flour and baking powder.
2. Beat eggs, sugar and salt until sugar is dissolved, put cake emulsifier. Beat at high speed until the batter is thick and pale.
3. Enter the flour mixture alternately black and white sticky rice and cooking oil (the second stage), stirring behind. Mix the condensed milk and coconut water.
4. Add a mixture of sweetened condensed milk and coconut water little by little into the batter and stir well.
5. Pour the batter into the heated pan. Steamed 25 minutes.
6. Remove the cake from pan when cool, then cut to taste.
